This year I wanted to put together some simple gifts for co-workers that wouldn't cost a whole bunch but would still generate some chatter. DIY Easy Giftable Christmas Granola in a Jar was a huge hit because anything in a jar is just completely awesome - especially something healthy. You can pretty much put anything in a jar, attach some ribbon or rustic baker's twine and a gift tag and you've got an instant DIY gift your recipient is sure to love. Here's how it's done:

Start with your choice contents. I went with a healthy granola recipe that I created last year and tweaked it to make it more festive. Basically I added pistachios to an existing cranberry granola recipe I mixed up last year, so that it would have red and green coloring for Christmas.

Then choose your jars, twine and gift tags. I went with a red and white striped baker's twine that I got for $1 at Target just before Christmas. I also snagged up some blank kraft paper card stock gift tags and some Christmas themed rubber stamps. This was so easy to assemble. Let your granola cool, then fill your jars to the brim. After topping them with a lid, tie your twine around the neck below the lid and use the twine to attach your gift tags that you addressed beforehand. Viola! Instant amazing DIY granola in a jar!

This granola is perfect served with ice-cold milk, on top of yogurt or ice-cream, or eaten on its own!

Cranberry Almond Chewy Granola

makes 8-12 servings - prep time: 10 min - cook time: 16 min

Ingredients:

  • 1½ cups dry oats
  • 1/4 cup flax or fish oil (or canola oil if you don't have either of these)
  • 1/4 cup flax meal (optional)
  • 1/2 cup honey
  • 1/3 cup cranberries
  • 1/3 cup unsalted shelled pistachios
  • 1/2 cup raw almonds or slivered almonds
  • 2/3 cup raw cashews
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg

Directions:

  1. Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.
  2. Mix dry ingredients in a large bowl. Add wet ingredients and mix thoroughly with large spoon to ensure all dry ingredients are well coated. You may need to heat the honey in the microwave for 10-15 seconds to make it easier to pour and measure.
  3. Spread out the oat and nut mixture onto the lined cookie sheet.
  4. Bake for 12 minutes in the oven. Remove and stir the ingredients to allow for even cooking. Put back in the oven and bake for another 3-4 minutes. Remove from the oven and stir once again.
  5. Allow the granola to cool. The granola will darken as it sits.
  6. Once the granola is cool enough, transfer to a cool cookie sheet to continue to cool. Place in an airtight container for storage up to 3 weeks.

Notes:

Serve with ice cold milk like cereal, or on top of Greek yogurt, or eat it on its own!
